An Easy Thirty Minutes

Remember Rachel Ray’s 30-minute meals? I never really felt like they were 30 minutes. All of her food was already prepped. If you have a crew on your TV set that preps it for you, it should be under 30 minutes. Of course, you could always buy most foods already prepped at the grocery story.

It’s been a while since I posted a recipe, so I have a 30 minute meal to share. I found it online a long time ago and I can’t remember where. I lost the link, but I had printed out the recipe to keep. However, most of us tweak meals the way we like them anyway.

Do you like Chicken Marsala? If so, this is a real easy one. Here’s how to make it in 30 minutes or less, and using only one pan. You can make this for two or four people. Or, add more ingredients for more people.

Buy boneless chicken breasts (2 or 4). You can buy them extra thin, or buy them regular and pound them thin between plastic wrap at home.

You’ll also need:

2 tablespoons olive oil
2 tablespoons butter
1/3 cup sun dried tomatoes
2 cups baby spinach
1/2 cup sliced mushrooms – I buy them fresh and sliced
1  1/4 cup marsala wine – I just use whatever red wine I have in the house
1 clove garlic, minced
1/4 flour
salt, pepper and oregano to taste

Sprinkle chicken breasts with salt, pepper and oregano to taste. Lightly dredge in flour.

Heat up olive oil in pan. Once hot, place chicken breasts (2 or 4) in oil and cook through until golden brown on both sides. Once cooked, remove from heat.

Add butter and crushed garlic to pan. Once butter is melted, add mushrooms, sundried tomatoes and stir to cook for just one minute before adding wine. Cook for 4 minutes and add baby spinach, salt and pepper. Simmer for 6 or 7 minutes.


The original recipe said the liquid will thicken from leftover flour in pan, but it really doesn’t. The vegetables absorb the liquid and it tastes delicious. I place the chicken back in with the wine & veggies just to re-warm.

Seriously, it’s really easy to make and has lots of flavor. It’s mostly healthy, too. I mean, the flour and butter could be omitted for an even healthier meal, but I find it loses a bit of oomph. Hope you like it.

  2. This looks yummy, Lori. I make chicken Marsala quite often, but I haven’t tried it with the sundried tomatoes and spinach. I’ll have to give it a try sometime. Thanks!

    1. I’m not a real big fan of mushroom either, but I eat them if they’re mixed in with other food, like this one. The sundried tomatoes give it a zest. Thanks for reading, Jill.
